In the times we are living, it’s a necessity to eat healthy and make sure the foods we eat are immune boosting and help fight invasive viruses. However, getting those healthy foods into children can sometimes be a major challenge! Over the years I’ve found that a super easy way to sneak these super foods into the daily diet of children is making smoothies!!! Making smoothies with children is one of my favorite activities! They always love it when they can help out in the kitchen, because it makes them feel included and like they are contributing. I like to use healthy sugar free and non-dairy ingredients in smoothies to ensure optimal absorption of the nutrients. 

One of my favorite smoothie recipes to make with kids is a mango kale smoothie. The color may throw them off initially but I have not experienced one child who hasn’t loved this smoothie once they’ve tasted it. It’s definitely a little unexpected treat. Kale is a excellent source of vitamin C and powerful Antioxidants, not to mention it’s a superfood. Mango is also loaded with vitamin C along with being a great source of immune-boosting nutrients. Adding the natural sweetness of dates in this smoothie also brings in protein, iron and promotes digestion. The last ingredient, the secret ingredient is Ginger. Ginger is an anti-inflammatory and aids in fighting infections. 

It makes me feel so good when children are getting these type of nutrient dense foods in them during my watch! Below are the simple ingredients and directions


Mango Kale Smoothie

Ingredients:

1 cup frozen mango

1 cup fresh kale

3 dates

1 small pinky size piece of fresh ginger

1 cup of spring water


Directions:
Place all ingredients in blender at one time and blend until smooth (about 1 min 30 sec)
